• 1 1/2 pounds orangic and local kale, stems and leaves coarsely chopped
  • 3 tablespoons olive oil
  • 2 cloves garlic, finely sliced
  • 1/2 cup vegetable stock or water
  • Salt and pepper

So, I am no nutrition genius. But I know that kale has a $h1+ +0n of Iron! As a long distance runner I try to incorporate iron in my diet at all costs because it really negatively effects my performance if I have a deficiency.

This is a super simple recipe that I usually include as a side dish paired with grilled chicken breast and mango salsa! Try it out, it’s luxurious

Heat olive oil in a large saucepan over medium-high heat. Add the garlic and cook until soft, but not colored. Raise heat to high, add the stock and kale and toss to combine. Cover and cook for 5 minutes. Remove cover and continue to cook, stirring until all the liquid has evaporated. Season with salt and pepper to taste.
