Oh yes.  This recipe guides the creation of a sandwich that will not only satisfy your craving for something savory, but that also involves a healthy dose of fresh, seasonal fruits and veggies: spinach, avocado and tomatoes!  Scrumptious at lunch or dinner, as a hearty snack or a main meal, you will not be disappointed by the flavor that the tasty later of tomato, avocado, and spinach provides when combined with the recipe’s spreadable components.  On its own it’s delighful, but toasted on the stovetop with olive oil, its delectable.  Welcome to the wonderful world of toasted sandwiches.

 

Serves 1 person

Seasonal ingredients: Spinach, Tomato, Avocado

 

To prepare this tasty meal you will need the following:

1/2 ripe avocado

1-2 tbsp pesto (to taste)

1 roma tomato (~3-4 tomato slices will be used)

a layer of either crumbled or block goat cheese

one handful fresh spinach

~1 tbsp olive oil

2 slices of your favorite bread (a nice ciabatta or artisan loaf works well)

 

…And then you will follow these steps:

1)   Spread a layer of goat cheese on one of the slices of bread

2)   Spread a layer of pesto on the other slice

3)   Add handful of spinach to one slice

4)   Place tomatoes and avocado slices atop bed of spinach

5)   Preheat stovetop pan and drizzle olive oil near center where sandwich will be toasted

6)   Carefully place sandwich in pan (an omlette frying pan works wonderfully) and cook on low heat until bread is golden brown

7)   Flip sandwich and toast the other side

8)   Slice diagonally to receive most enjoyment from sandwich eating experience.

9)   Repeat everyday…you will get addicted.
